Lychee is undoubtedly one of the signature tastes of summer. Its delicately fragrant tones are the perfect contrast to spicy Asian fare, and the fruit’s subtle sweetness can stand on its own.
One of lychee’s favourite places is inside an EasyWay-style crushed ice. It’s improved, of course, by the introduction of ginger, mint and white rum, as in this delicious Lychee Mojito.
To make your Lychee Mojito, you’ll need to make a special variation on the simple syrup: add equal amounts of water and sugar to a saucepan and bring it to the boil. Once it’s bubbling, add a handful of chopped ginger and take the pot off the heat, allowing it to cool. Strain the ginger from the liquid, and, voila, you’ve made ginger syrup.
The rest of the Lychee Mojito process is easy: take an ice-filled cocktail shaker and gently muddle some tinned lychees, lime and mint. Throw in a shot of good-quality white rum and a dash of gin. Pour over a small amount of lychee juice you’ve reserved from the can. Finally, add some of your ginger syrup, and give the tin a shake.
Strain the contents of the shaker into a tall glass filled with crushed ice, top up with Schweppes Soda Water and garnish with mint and a little lychee.
