Honey can be a difficult ingredient to harness in a drink. It’s a natural sweetener and has a distinctive taste, making an ideal candidate for an ingredient. But it can go either way when you start plying it to drinks.
There are a few tips for dealing with honey and getting the most out of it. First up, it’s runny but not actually all that useful straight out of the jar. Try diluting it first to make it easier to measure and to ensure you get all the flavour into your drink. The best ratio is a 1.5:1 ratio of honey to water. This ensures that you can mix with it and retain maximum flavour.
If you’re experimenting with your own drinks, balance is the key. If you’re dealing with a sweetener, you need to balance it with something sour. Lemon and lime love the honey, but so does grapefruit. Any more than 20ml of honey water in your single drink and you’re likely going to overdo it.

50ml grapefruit juice
20ml honey water
20ml fresh lemon juice
Shake all ingredients and strain over ice into a highball glass.
