Three of our favourite floral cocktails to celebrate the warmer weather
Finally, the long winter is over. Leaves are unfurling from the maple and the cherry, and the night air is thick with jasmine. So too are we emerging from our winter dens, back into parties, picnics and rooftop bars.
To celebrate the warmer weather, here are three of our favourite spring cocktails for you to make (and enjoy).
Coriander is a flavour that doesn’t often appear in the cocktail world, which is a shame because its fragrant, refreshing scent works beautifully well. For this Coriander Cooler, simply muddle around eight coriander leaves and some sliced cucumber in the bottom of a shaker. Drop in some ice, add a squirt of gin, then squeeze over the juice of a lime. Shake enthusiastically, then strain into a glass half-filled with ice and pour over some Schweppes Ginger Ale.

Okay, it’s a no-brainer, but a Classic Pimm’s is the ultimate spring drink. Whether you’re having a hit of tennis, wielding a croquet mallet or wearing a sweater tied around your shoulders, drinking a Classic Pimm’s in the sun is the perfect accompaniment. It’s ludicrously easy to make: half-fill a tall glass with ice and add some cucumber, orange slices and mint. Pour in a generous dose of Pimm’s, then top up with Schweppes Lemonade. Drink in the sun.

Cherry blossoms are still twinkling from the trees, so it’s the perfect opportunity to pop them in a cocktail. This delicious cocktail is inspired by the flavours of Japan (though adapts them pretty freely). Combine cherry vodka (like Svedka), sweet Nigori Sake, a splash of cranberry juice and a dash of peach nectar in an ice-filled shaker. Shake wholeheartedly, then strain into a cocktail glass and garnish with the prettiest cherry blossom you can find.
